Novels are pretty good, depending on your preferences in fiction. It seems like you get a better experience by reading the novel first, then the manga, then the anime. Here's some of what I've been reading, a lot of it Korean or Chinese, but typically in the same vague genre.
Trash of the Count's Family

MC is reincarnated as an asshole son in a noble family from a story he had been reading, and in the processe, was able to retain complete memory of the story. Not wanting to get his face caved in by the transmigrated hero in the original story, and wanting to take it easy, he starts setting up schemes to prevent disasters, to stop assassinations and terrorist attacks, and to protect himself from the war in the story. Of course, everything goes pear-shaped, and he is thrust into the center of everything as an unwilling and lazy hero who can't stop picking up amazing subordinates.
The Death Mage Doesn't Want a Fourth Time

This one's a doozy. Basically "My Class Got Reincarnated In Another World, and All I Got a Pat on the Back Instead of Cheat Powers", but goes off the rails but quick. It swiftly becomes he would would devour gods, and also make cake and cookies. A good read, and the manga is pretty faithful to it. I think it's going to be animated eventually.
The Spear Master and the Black Cat

A bit weird, but basically a guy is given the choice of race and powers when he dies in some unfair manner. Since he doesn't want to die again, he selects some variation of vampire that can tolerate sunlight, and ends up in some sort of cave system. Gets a bit clunky here and there, but the pacing is good.
Exterminator

A pest exterminator is transfered to the fantasy world, and doing what he does best, begins exterminating pests for the town he's in, not realizing that the pests he kills are monsters, even if they're small and just a nuisance. Killing monsters nets EXP. Poisoning monsters, that later get eaten by other monsters, and are killed by the poison, also grants EXP. Hijinks ensue.
I Reincarnated for Nothing

One of the four great demon generals, whose heart wasn't in the whole "destroy humanity" thing, is killed by the hero's party, and wishes, as he died, to just have a small farm, with cows. He is reincarnated and apparently sent back in time, as a human boy in the same town as the girl who becomes the hero of his past life. Yet another case of "taking it easy was going to be much harder than I thought".
Most everything else is annoying to me, but these ones are alright, and have a shitload of chapters to read.
