The N64 Evangelion game just recreates all the battles in the anime as a barebones 2D fighting game, or by sometimes switching to a rail shooter or other type of gameplay. Sin & Punishment is a full on rail shooter where you control your character and crosshair simultaneously while slashing back missiles with your gunsword. ZoE is about going fast, spamming homing missiles, and throwing shit.

The psp Eva fighting game is good, but the final fight is a tad bit difficult for no reason. If you know Japanese, nerv white papers is pretty fun paper and pencil, but I was fucked 6 ways from Sunday on the hosts alcohol, so I can't be certain.
