First one has a better vibe/story, second has better gameplay but was designed for co-op. Also I've seen Tale of Wuxia mentioned once in a blue moon so you may have not tried that one. It's chinkmade and the translation is a bit janky but there are multiple routes that branch to that particular deep dark fantasy of yours. From what I recall Wild Arms 2 does it as well, though the western version lacks any lyrical versions of songs within the game, though depending on who you ask, they'll call it a good thing. Anyhow, I really like the main series on the whole (though 4 is a definite low point), but 2 and 3 are my favorites. And in terms of general fan opinion, at least on imageboards over the years, 1-3 are the ones series fans tend to have at least one of which be their favorite, so I'd at least recommend giving 2 a go. Has a similar "uses FP not MP" system as WA3, as well as the Personal Skill System, but both are a bit less refined (namely the latter being permanent, and stat boosting ones being cumulative from level acquired and thus an emphasis on what stats to prioritize bonus gain in character build).
Try hitting Todd with some fire damage next time you replay 3, if you haven't tried that before, and see what happens.

WA2 has multiple openings as well, but less an evolving opening and more of a "Season 1" and "Season 2" sort of thing, completely changing the animation and song between them. Was a nice surprise to suddenly get blasted with "Resistance Line" the first time I booted up disc two, disc one having had "You'll Never Be Alone, No Matter Where You Are" for its opening.

Something I like is having a game that feels videogame-y, especially humor or writing. So many games try to emulate blockbusters with snappy comebacks and witty quips, with very mixed results. I like it when a game has its own identity and insane/out-there humor that feels different or unusual, instead of standard fare, even worse if it's just "haha, did you get that reference?", which is why I greatly soured on Skullgirls , it's just throwing references but has no identity and can only stand on the girls' designs. A recent example of weird, kinda unique humor was Lisa. Sure, it has loads of wrestling references, but it was mostly in the names or moves, but shit like the bulldozer guy and his failures at life was goddamn hilarious.

What do I like in games… its hard to point what I like. Here's one, Trails in the Sky 1 (as I'm playing currently) does something good which makes me actually enjoy reading main story text.
Every new town you go to, you know the reason why you are journeying, to visit each Guild branch and be commended from your work in the region. But with each town you meet up with new people, who introduce you to the area. Many things happen, and its a good mix of a few fun hours per town. Good pacing.
So, pacing. If you get pacing right, you want to come back day after day and progressing. I stopped 2 days ago due to the wolf monsters being way OP, its like 2vs8 and they will literally 2 hit you, and have 2x speed meaning they hit you twice for every 1 character attack.
Kingdom Come has good pacing. Narratives require good pacing.
