Two devs from Insomniac have a letsplay of the Ratchet and Clank PS2 trilogy which is pretty good. My only problem with it is that there's resonably no evidence of most of the workplace shit they were talking about, but I can definitely see Mark Cerny shitting on someone for making a slightly difficult "puzzle" segment and it gives you an insight into how PS2 developers were thinking, and probably a glimpse into what made first party Sony titles what they are now.

Any of Bungie's making-of videos, as well as their developer commentary playthroughs, are well worth the watch. Seeing how much they actually cared about their work is enjoyable and also saddening when comparing it to the current state of Bungie and the industry as a whole.
