The kind of hardware you need depends on how advanced you intend on getting. A joystick is typically all you need for any AAA game and depending on the type you get, it's also passable for something like FSX. Something like a Thrustmaster T16000M FCS is considered to be in between introductory and enthusiast level sticks and will settle for most of your needs. It even has a slider if you don't purchase the throttle. Beyond that, you'll definitely want to have a separate throttle. Once again, the T16000M throttle is a good fit. It's all really cheap plastic shit unfortunately, but everything beyond it is not worth the money.
You should also know a fair bit about simulators first. FSX is probably the easiest way to get into flight sims because it doesn't expect much aviation knowledge from the player. X-Plane is also good but a little more complicated than FSX. If you want a more accurate simulation, go with FlightGear and Prepar3D. For combat simulation, there's DCS and Falcon 4.0 with BMS. Note that it is crucial for you to read manuals and watch videos to understand how the planes work. Also note that most games have digital marketplaces where they sell planes for money. Simulators are far more Jewish than any AAA game, but less so than EVE and Entropia Universe.
