Anduin just frees Saurfang so he can go off on his own and be a thorn in Sylvanas' side by attracting Sylvanas-hating Horde to his cause. He's not joining the Alliance. There's a quest line on the test servers where you can either join his mutiny or stay loyal to Sylvanas. Sylvanas is being set up as Garrosh 2.0 anyway.

It's because Blizz is on a strong wymynx streak with Warcraft right now. Part of it is overall "progressive" company culture, part of it is from Metzen getting "woke," and part of it is from Christie Golden. In one of Christie's books she explicitly says that Sylvanas feels accomplished because she's a woman and all of the Horde's past warchiefs have been men. In other words she has plot armor supreme because she has a hole between her legs.

Blizzard actually believed that Sylvanas would be a unanimously popular Warchief just because she was a hot thot from Warcraft 3. They had a similar thought when they made Vol'jin warchief. The whole debacle could've been avoided by keeping Garrosh as warchief or giving Thrall a new voice actor to replace Chris Metzen (who retired from Blizzard). Really, if they wanted to pander, Cairne Bloodhoof, Vol'jin, or Saurfang would've replaced Thrall originally.
