Usually because it's a replacement for the feeling of what normal life should be. These neglected guys that made it to an adult age are aware that they're not living normally and slice of life fills that hole.
I used to watch a shit load of that shit but thanks to OCD to some extent I literally cannot stop thinking about things. I can't keep watching them as it's obvious that they're either propaganda or some bizarre power fantasy due to existential crisis of neglected children.

You're not looking hard enough then or have really shallow tastes then. "Heavy shading and vivid action" anime still exists too just there's far less of it as it's expensive and there's not as much of a market for it anymore. Kanaberi of the Iron Fortress and Redline are two fairly recent examples of this.
Though i'd recommend you actually stick around for some of the genuinely good shows.
Ping Pong is a sports anime that actually bases the plot around the idea of skill vs talent and motivation vs discipline. It's animated very strangely but the animation lends itself to very vivid movement.
Mob Psycho 100 is almost like a criticism of some of the stupidity of shounen themes. Sure friendship and character are reinforced but it's sure to drive home the point of "You're not so special that you're exempt from having to better yourself"
I won't deny that animation over the years has gotten worse but that's more to do with the market than it has to do with ability. While the art in Anime has gotten worse the art in Video Games and Manga on average have improved exponentially. Good art in older video games and Manga was almost guaranteed success but right now unless you get published by a big magazine there's no chance for your manga (with the exception of ONE for internet culture reasons I'd assume).
Take Tsugumomo for example. It's an incredibly forgettable ecchi manga that is completely carried by the artists supreme mastery of anatomy and polished methodical technique to the printed style of art. This manga got an anime adaptation probably because of his insane ability to make the most poorly written fights to be compelling through visuals alone.
You don't have to like modern works but don't act like all anime is shit. Treating all modern anime fans are intolerable faggots is misguided as well. Granted if you're that stupid to assume such already this post means nothing to you but hopefully someone takes interest in it.
