Mattermost does a bit more than Slack, and does certain things its own way, but if you compare Riot/Matrix to Mattermost, it'll come down to most of the same thigs you get if you compare it to Slack.
One advantage of Mattermost is that it's a bit easier. It has a reference client that works out of the box, where a matrix server(s) and client need to be separately set up. Matrix setups are more complex, but more flexible and powerful. Mattermost will be easier to maintain and manage, but less flexible.
For small, self-hosted setups by small teams, Mattermost is probably going to be easier to manage and maintain. Mattermost has a bit of an easier learning curve as well. Matrix is more for serious endeavors and large network setups.

In order to make it useable, you have to build the system around as much as possible being automated, like key sharing, but ensuring that this information never comes into the hands of the server.
So yes, the encryption itself is easy, it's all the management, decisions, and everything around the encryption and keeping that easy and secure that is the very difficult part.

Plenty. A lot of the administration either comes in through server hacks or via bots. It's fairly common to have to do a lot of channel management through bots where other chat protocols and systems have those features integrated. Netsplits really suck, as IRC wasn't well-designed to handle node splitting and resolving splits, so it doesn't work well as a federated protocol.
Things like allowing user account systems, ensuring that nobody uses somebody else's nick, having channels voice off by default and having prerequisites to talking are things that shouldn't require bots. Some of those things are truly better integrated.
IRC is also particularly bad when it comes to true privacy, as it always broadcasts user IP by default. You have the option of hiding it with certain features of certain networks, but it really should be by default. It predates an era when people were very concerned with privacy and security in computer networks.
I love IRC and I have a lot of fond memories, but there's only so much new functionality you can load onto old protocols that weren't designed for it. Half of what makes modern IRC usable is a pile of hacks client-side and server-side as well as swarms of automation bots all built around jamming functionality onto a system that wasn't designed to be extended.

I have two main folders, and a few subfolders for OC, webms, weird fetishistic autism/Sanic, and maybe three or four other small groupings of related images.
The only time I really can't find an image I know I have is when I go and change a stupid filename that's been unchanged for several years, but I don't do that anymore. Still, some filenames have just gone out of fashion, like all those "Bioware verbs a noun.gif" jokes from times of yore.
I still have quite a few images between from between 2007-2010 that still have Unix timestamps, but I tend to know roughly where those are so I don't have to go through the entire mess.
I'm still pissed that, save for a few singular images, I've lost my collection from before 2007.
