But yeah you can play as Mr. Skellington in Lego Worlds. In AVGN Adventures, the Guitar Guy is a skeleton. There are bunch of skeleton skins in Quake 3.

If turn based games count, Age of Wonders. Bonus points if you pick death sphere, then you can summon more skeletons and raze cities in order to reanimate them into undead ones. HoMM3 also but that goes without saying.

Divinity: Original Sin II as Fane is pretty good. Most people will run away/attack you if you don't wear full armor to cover up, and there are some good dialogs with the few other skeletons in the game. You could probably do a decent skeleton simulator run by having no party members and deliberately not wearing a helmet.

I'm not sure about other changes, but they added a narrator stuck in your skull that doesn't like to shut up. This narrator gives you "hints" instead of letting you figure things out on your own. On top of that, he fucks up the humor of the original with his own crap.

Having played both, the remake manages to ruin the dark humour and atmosphere the OG had by inserting a lot of $CURRENT_YEAR humour that would feel dated even today, despite the remake coming out like a decade after the OG. It also streamlined some things, and cut some levels out. It's not a bad game, but as a remake its inferior to the original in every way.
