In the Garouden game you can do a lot of different injuries and in the karate master you can instakill people with lucky hits by breaking their heads or ribcage. Mortal Kombat is just a lot of bells and whistles but all of that has no effect on gameplay and its novelty ended in the ps2 era imo.

Bushido Blade has it to some extent. You get hit in the arm and you can only use the other arm for your attacks. Get hit in the leg and you fight on one knee. Sadly you can remove limbs or injure 1 set of limbs.
