That's not entirely true.
When you're just starting the game, the excitement comes from exploring europe in general, bonus points if you're from a featured place.
After the exploration has come, the different mechanics still keep the game fresh, somewhat:
>weather
>radio
>random events
>traffic rules
>hiring and managing your own trucking empire
>picking convoy deliveries where guards/police are both behind and in front of you and you're carrying a very wide cargo
>picking rush deliveries where you have to deliver your cargo really fast
In the end, I think the players that stick to truck sims are those who 'want to drive, but don't want to drive'.
