Can you think of an occupation that has never been turned into a video game?
For example, I don't think there has ever been a game about being a conductor. A conductor "shapes" the music he is conducting; to truly emulate the role of a conductor, the game would have to allow you to make a song sound more/less aggressive, change the tempo, etc. You'd have to make eye contact with specific members of the orchestra, and so on.
There's an iPhone game called Symphonica about conducting an orchestra, but it's just a typical rhythm game where you tap buttons along with a melody; it has nothing to do with actual conducting. (Likewise, Mario's allegedly a plumber, but the Mario games really aren't about plumbing.)
What occupations have never been explored in video games, and which would you like to see featured in a game one day? Specifically because it's something you think would be really fun.

Also, Ultima Online had a beggar profession. In the '90s it was pretty difficult to level, and the last few points of the skill required begging from a randomly selected NPC. And by random I mean any NPC in the game. It was a pretty large world, so being a grandmaster beggar was something people were very impressed by.

Lighthouse Keeper. Which is understandable in that most of them no longer are around as most lighthouses are now automatized, but also sad because of how easily you could build a horror game around being a single, lonely soul stuck on a miniature version of an island during a stormy night. Fuck's sake, I'd even accept a walking simulator.

I could see this being done in a more ambitious project. Instead of just bullfighting, add other stuff like gladiators, knights and lions, and other type of warriors and beasts and arena-based stuff. Make it a game focused on PvP combat with deep mechanics. You can even do shit like gladiator VS bullfighter if you wish. Give it a bit of that CUHRAYZE vibe and you got yourself a fucking gem of a game.
