The problem I see with sports games is that most of them you can already play by just dropping by the local park, asking the people there "Hey, do you want a game of [X] going?", and nothing else needs to be said. However, to contrast with that, I don't have a problem with video games of sports that require actual skill, and/or a specific setting and equipment. And, sports games that are completely fantasy benefit from being ridiculous and designed around being fun.

I got NBA Live 2000 for N64 for Christmas one year and had some fun with it, mostly because you could turn off all the rules so you could dribble out of bounds and shove every nigger without penalty. I also remember the original Hotshots Golf being popular among my friends and I growing up. The Tony Hawk games, WWF No Mercy and Smackdown for the PS1 were pretty fun if you want to count those. I only really play motorsports games these days though which is kinda funny considering I hated realistic racing games as a kid.

The major sports games (baseball, football, American football) are a fucking shitshow because they're popular, so the big-name publishers (like EA) can get away with pushing out such low-quality shit on a regular basis, and competitors follow suit. It's about two real things:
* Is it a team sport with a strong team component? If so, it's probably not well-suited for a real-time video game, as your side would have to rely heavily on AI, so it would either end up being AI vs AI, or you only control a tiny piece of the field at a time.
* Is it a very popular sport? If so, it's probably going to be a shit game, because the publisher has to target the lowest common denominator of consumers to pull in the maximal profit.

I despise all kinds of 'realistic' sports games. Tennis games have been in the shitter for longer than I can remember. The only good 'realistic' tennis game I remember is Top Spin 1's PC version. For gimmicky games, Mario Tennis (N64) and Mario Power Tennis (GC) were good (without power shots).
Virtua Tennis a shit. 'max' serves don't have return options. it's either free floaty ball for the server or send the ball out. Return aces don't exist basically. smashes post-1 are basically unreturnable even with proper positioning. lob shots post-1 are a joke.

Unless they do it REALLY well - in which case they are no longer video games, but simulations. The difference between the two is that the goal of simulations is to replicate the real world (or at least, some aspect of it) in as close to a 1:1 fashion as possible - and it's useful for developing real world skills. Games, on the other hand, have arbitrary rules with the goal of entertainment or challenging the player. These rules may resemble reality, but do not try to replicate it because a large part of entertainment is in providing novelty - and there is no novelty in the mundane.
Simulations are not vidya, and trying to pretend to be vidya just fucks up the accuracy of the simulation and makes the game not fun as it never rises above the level of the mundane.

Older sports games couldn't be realistic, so the devs settled on making them exaggerated and as fun as possible. You had the WWE games, FIFA Street, Tony Hawk games, the PES games (PES6 if I remember right) where everyone looked like they were 4 feet tall and moved at sonic speeds, Motorstorm, MX vs ATV, etc., etc..
Then the cursed year happened. That one. Yes. Current year -8. The Year of Our Lord God 2007. And developers realized that "realism" was finally an achievable goal. So now, FIFA Street is dead, regardless of the shitty 2012 reboot, because regular FIFA simply made more money because of realismfags. The WWE games are also shitty simulators with a huge slew of technical issues and downgrades between games. Skating is a dead genre in general, Motorstorm went to shit, and MX vs ATV apparently put out a game a couple of months ago, but I can't even find a wiki page for it, if that tells you anything.

Mass media sports (handegg, association diving, apehoop), and by extension the games about them, are the circuses in "bread and circuses". These games are developed with an unthinking cattle audience in mind. Much like they buy overpriced chink shirts and apparel, they have no qualms about buying the same game every year and the mid-season roster update DLC.
Non mass media sport games have a niche audience to begin with so they have to actually produce a compelling product for it to sell. Once in a while a golf or fishing games thread comes up and everyone seems to like them.

Fifa Street was shit aswell. Just boring shit with janky animations. Fifa went to shit way before Fifa 2007. It was around 2000 it was geniunly fun to play the game without weird simulation and horrible controls.

A real issue with sports games is that if you played Madden 20 years ago, you've essentially played Madden today. Football is essentially the same. Baseball is essentially the same. Some sports have ways to make games that are different enough to make you want to play them, like racing games with great course selections and vehicle options or volleyball games with beautiful babes and T&A physics. But ultimately, simulation sports are just the same thing every year, removing a feature, adding a feature that was removed previously, or improving the graphics.
I guess what I'm saying is that sports games aren't explicitly bad as much as there hasn't been a reason to play them again with the occasional exception.

Yeah, I played football all the time in my teenage years because the local school let us use the pads and helmets because they wanted to keep people interested in football. Played on the actual football team too. Unfortunately for your point and despite my experience, this argument only applies to sports that have expensive barriers to break in order to play. You need nothing more than the people involved, two nets, and a ball in order to get a real soccer experience. There are also many sports with budget entry options and small numbers of participants, and there are many sports where you can just rent the equipment. There are groups and networks for people who are into sports just like there are groups and networks for people looking for D&D groups.
But that only really applies to sports simulations as opposed to true fantasy sports or arcade sports. You can easily play golf or go bowling or play soccer. Of course there are sports that you can't really play easily.

Oh man, I was a private beta tester for that game. I got paid $50 to play it for two days and give feedback. There wasn't any P2W in the beta and it was great, and I actually had a lot of fun. It was legitimately the best golf game I had played until it actually released and had things like the Korean P2W enchantment system for clubs. I'll never forget it because it was called Project New Sky, and I was expecting some kind of flight simulator or aerial combat game, and I sat down and played golf. I was completely ready to leak everything I could to you guys (this was 2015) but nobody would have given a shit about a golf game.

Spend real money to get better clubs, bags, and limited-use balls that make your shots go further, make the shooting gauge slower and more reliable, and make your shots deviate less. You can enchant clubs to make them better, near-guaranteed to perform a +1 enchantment, but going from +3 to +4 can ruin the process. Conveniently, you can spend real money for reliable enchantments. There are also consumables that you can buy with real money that do things such as show you the weather details or even showing you the layout of the green to downright showing where your putt will go.
You cannot play in tournaments in that game unless you have spent real money or unless you want to farm casual games with friends or solo games for months and months.

As a single and very lazy example, you can't kill children in the vanilla version of FO4. Simply comparing violence in general to something more specific, like sexualization of young characters in fictional media is a poor argument, in my opinion. I haven't played it, nor do I plan to. They removed risk shots (what made the series) instead of rebalancing them. The AI also cheats like a bitch on very hard and expert, reading inputs and getting stat buffs. Not sure about whether you can cheese it as bad as 3 since I haven't played it.
