I made a fort which has an entrance underneath a dammed waterfall so I can just release the dam (which is just a raised bridge)and send enemies to drown in the river below when they try to cross the bridge in the canyon.
Also I used to use tilesets but after reinstalling recently I was amazed to be able to play perfectly fine with just ASCII

There are tilesets if you can't stand the ASCII.
When I started playing the ASCII was my main hurdle so I started by using tilesets, over time though I was able to use the ASCII just find, I occasionally use tilesets anyway for aesthetics though.

Last fort I ran my dorfs managed to lose like fucking 400 units of food trying to cross a river to pick up some food from a tree then in turn trying to pickup the food they lost, they refused to retrieve any of it so I had to forbid everything to prevent them from losing more food. Goddamn idiots.

I'm trying to smelt galena. Wiki says it makes lead and silver bars but it wont let me designate it for melting (option grayed out). I made a smelter, wood furnace, have nearby charcoal, and still wont work.

"melt" is for melting down metal objects like furniture and crafts into bars. For ore you want to use 'q' on your smelter and designate a smelt galena job

How big is this stockpile in question? The empty/full dynamic of a stockpile is determined on a space by space basis. That should only be a problem if the stockpile was 1x1 and the single space is filled. A bigger stockpile can fit 1 thing on each tile.

I changed it to medium world, short history, medium civilizations, and FPS went to 100. Seems like world size does have a huge impact (think of all that shit thats being calculated between civilizations).

Almost nothing outside your fortress is actually being calculated during gameplay, at least not in realtime, it calculates it in chunks at fixed times, this is why you can't play multiple game modes concurrently on the same world. Water really fucks FPS more than anything else I find.
Aquifers are hard as fuck, I played for years without them before I got gud. They're really useful once you learn them though since they can create and dispose of infinite amounts of water.

Was busy after I started the thread but finally starting a new fort, within range of every race, and a tower.
I've been getting bored with how I choose my locations, usually pick the best and most idyllic places I can find so I'll never be short of materials but this time I chose to start in a white-sand desert and digging into the foot of a mountain. Supposedly there's an aquifer on the Western biome, the desert, so I either need to find it or step up plump helmet production and let the wine flow instead.

I experience my first batch of fun just the other day. Things were going boringly well; ~120 pop, inefficient and ugly as one could only expect from somebody that truly does not know what they're doing, and somehow free of the werelizard problem that had plagued me for over a year. Eventually a titan appeared, but through sheer dumb luck I had thought to build a bridge built at my fort entrance. My livestock kept him busy as I learned how to issue alerts and remembered that bridges require levers, and levers require mechanisms, which I didn't have on hand. I got that sorted, but had to figure out how to get water in to my fort. I did some research, built a small pond just under the river, built the floodgate, and attached a lever and pressure plate. To put it short, I reversed the settings on the pressure plate in a way that I'm not sure I could fix: it was set to keep the floodgate closed when there was no water in the pond, and only open once the room had flooded.
I'm starting my 5th fort today– the last 3 having been botched during the embarkation phase– and the first thing I'm going to sort out is a way to indefinitely stay underground if needed.

You don't restrict your dorfs that way, make burrows w key and use the military panel to create alert and restrict citizens to those burrows. The way you do doesn't restrict, it just helps pathfinding, little misleading.
And you can make it through aquifers, it just requires some careful planning of digging and channeling of ground before hitting solid stone.

So, want to get through the aquifer? I'll try to explain it as best as i can.
Dig stairs down to level just above the aquifer, make a 9x9 room or bigger on the mentioned aquifer. Once done, channel the dug room carefully, releasing the water in the dug channel
Next phase is to channel the outer bounds of the dug area, where the water resides. Start it from the ground level, but leave one tile unchanneled. Channel it all the way down above the aquifer layer, make sure all the edges have been dug out, leaving no floor tiles or soil walls, except the one in above ground
And for final touch, channel the one tile you left the soil hanging. Try not to get that digger killed, the collapsing soil can either push the dorf away or in worse cases, pull the dorf down. As it collapses, it displaces the aquifer area, making it safe to dig deeper. The aquifer may be deeper, so you might need to do it again. JUST DON'T TOUCH THE OUTER BOUNDS OF THE AREA THAT DISPLACED THE AQUIFER OR YOU RISK TO FLOOD IT
And in case of deeper aquifer and not enough ground to work with, cut some timber and make wood walls above the dug area. Once it is filled with walls, remove outer walls so it falls down. The same thing happens with dug soil, it collapses with dust that can pull or push dorfs.

Well that depends what was getting to you, I found the manager to be a huge weight off once you get it set up since it automatically queues up jobs to be done and things to be made without you having to individually have them ordered. Eventually a lot of the game becomes more macro-management because the fort you've set up is like a machine that you've programmed and in most cases you don't need to be doing anything to stop it from collapsing.

Every time a trader caravan comes, tell the merchants that you want to import as much food as physically possible. Food is dirt cheap anyway, and if you have too much of it you can always just make higher quality meals.

I'm currently a werebeast necromancer, I'm legendary in every fighting skill except for individual weapon skills, I have every useful attribute maxed out and I'm completely covered in steel armor. I figured I had enough stats and I'm currently mowing down a dark fortress. No cheating.
You just need to get experienced with the game and learn to pick targets and how to fight (how to fight boils down to cut off foot and then behead), eventually you'll have an adventure character who lives to have high skill levels.
