It's about 14 newcomers which feels about right, Mashpotato Samurai never said to expect less newcomers than any in history, just not to expect a ton like in the previous games. Which if he went by the pattern would force him to make 24 characters. We had 17 Newcomers in Smash WiiU, 18 in Brawl and 14 in Melee, going by this pattern if we include the 7 cut characters into Smash Ultimate we get about 21 characters. Now what I expect post launch is them to either go the old route which would be to bundle two characters for eight dollars OR they can go the expansion pass route which would include about ten characters, the missing stages and a few new ones for about 30 dollars. I would also expect Assist Trophies to be apart of the All-Star modes since you can actually KO them this time around, and I think they wanted to do that for Smash WiiU since Mashpotato Samurai originally said that they would have a place in All-Star mode in the Smash Direct, however in the end product they were nowhere to be seen. Additionally I can see them using the Joycons to have some kind of special All-Star mode where you pick a character and an assist trophy that basically plays like a gimped complete character, which is not something I'd want, but something that is possible. Instead I'm kinda hoping they also make another Expansion pass which includes all of the KO-able Assist Trophies, but that's just me being an optimistic fool.
tl;dr
7 cut characters plus the 14 newcomers equals the same newcomer number as WiiU, which would align up with Brawl's patterns. Expect an expansion pass that includes 10 characters, and for some assist trophies to be in All-Star mode.

Including every character ever in Smash was a fucking dumb idea and Sakurai should be shitcanned before he can fuck up the next one. I was sincerely hoping they'd try to cut down their bloated roster but remarkably they've gone ahead and made it even worse. Let's go through a run-down of the entire Smash Ultimate roster:
Super Mario Bros
Mario, Luigi, Peach, and Bowser are all good reps for the Mario series, but Dr. Mario and Daisy should never have been included as separate characters. The entire concept of Echo Fighters in ridiculous and could easily remain as costume choices for their respective echoes with cosmetic changes to their attacks. In any case I don't think Echoes should be taking up space on the roster but I digress.
Rosalina likewise should never have been put in the game, being a one-off character that Nintendo tries to shove down our throats now as the "Best New Princess!!™". That said, her moveset at least brings something interesting to the table and Nintendo will never take her out of the game now because they have to remind us to buy her Amiibo™.
I think Boswer Jr. is a fine addition and while I think Mario has too many reps to begin with I don't mind his inclusion because his moveset is interesting and it's Mario so I suppose it's fair if Nintendo's flagship franchise has the most reps.
Yoshi
I consider Yoshi more of a Mario rep but since he has his own series I figured I should put him here. I personally don't care for Yoshi but his moveset is unique and other people like him, plus he was one of the original 12 so I doubt he's going anywhere soon. I just Nintendo would make him viable to play as and give him some better recovery.
WarioWare
Like Yoshi I've always thought of Wario as just another Mario character, but he has his own series and is fun to play. I have no issue with Wario. Now, if he was never given his own series and remained as a one-off character with no depth who served only to fill in a spot for Mario Tennis, then there'd be a problem and Waluigi will never fucking be in Smash.
Donkey Kong
DK and Diddy are fine reps for their series. If Nintendo were to add any more characters here I think K. Rool would be interesting but he hasn't been in a game in over 10 years and I'd expect to see Dixie or Funky Kong in Smash before K. Rool but that's pure speculation.
Punch Out!
Little Mac is fine, I don't think Punch Out needs any more reps.
Legend of Zelda
Link, Zelda, and Ganondorf are really all this franchise needs. I don't understand the enormous hardon Nintendo still has for OoT 20 years later and I think they'd be better off focusing on their newer titles but it's probably just pandering at this point. Young Link has no reason to be in the game and Toon Link is just an Echo of Link. Sheik at least has an interesting playstyle but has only been in a single Zelda game 20 years ago. It would make more sense if they put in Impa or a Goron or something, but I don't really care.

Samus and Ridley are fine to rep the series, I don't think it needs anyone else. Knockoff Sheik Zero-Suit Samus doesn't need to be in the game for anything other than fanservice.
Kid Icarus
Pit was all this series ever needed for representation in Smash but Palutena at least has some interesting moves. Dark Pit is a retarded waste of time and resources that Sakurai just wanted to shove in so he could have more characters from his pet project.
Fire Emblem
Fire Emblem has no business having six fucking reps in Smash. Marth can stay and Robin brings some unique moves to the series but everyone else can fuck off unless Nintendo wants to include one extra character to shill their newer games.
Kirby
Kirby, King Dedede, and Meta Knight are fine. If they want to throw one more character in there whatever but three seems perfect if you ask me. I would expect Marx before Waddle Dee but what do I know.
Star Fox
Star Fox is a dead series and only has one character in Smash under three different names. Falco is at least someone different playstyle-wise to justify keeping as a separate character but Wolf should be a costume.
Pokémon
Like Mario, Pokémon is a large enough series that more reps is understandable. Lucario and Greninja have done their job shilling for their new games and can go. Pichu was never good and I have no idea why it was in the game to begin with. Pikachu and Jigglypuff are unlikely to leave and I don't have too much of an issue with Pokémon Trainer. Mewtwo can stay or go, and they'll probably put in Decidueye, Incineroar, or Primarina to shill the new games.
Earthbound/Mother
Ness and Lucas are fine but honestly should be considered Echoes to make room for Mr. Saturn to make his big debut as an official Smasher™ already
F-Zero
Dead series, but Captain Falcon is the best character in the fucking game and can never be removed. Does not need more reps.
Animal Crossing
Villager is fine and a lot of fun. An Isabella costume would be welcome but an Echo taking up space might be hard to justify.
Pikmin
Captain Olimar with the Alph costume is fine as is. No change needed.
Wii
Wii Fit Trainer is a fun and unique addition but I can't imagine anyone being too upset if they removed her. For now I think she's fine. Mii characters don't need to be in the game.
Xenoblade Chronicles
I don't think this series needs more than one rep. If they want to introduce someone from the new game then Shulk can go.
Retro Games
Mr. Game & Watch, R.O.B., and Duck Hunt are all fine, but I never understood why Ice Climbers needed to be both Nana and Popo. Should be changed to one Ice Climber with each character being a skin.
Splatoon
Inkling looks like a fun rep for Splatoon. No issue with their inclusion.

Sega has Sonic repping Sonic the Hedgehog and Bayonetta repping Bayonetta. Both are fine. If either is getting additional representation it'll probably be Sonic with Tails, Knuckles, or Eggman but I don't expect any of them for right now.
Capcom
Capcom has Mega Man and Ryu, both of whom I don't see needing additional reps from their series, especially Ryu considering Street Fighter is already a fighting game.
Bandai Namco
Again, Pac-Man doesn't need any additional reps but a Ms. Pac-Man costume would be welcome but nobody's really begging for it.
Square Enix
Cloud repping for Final Fantasy. No problems here for me.
Konami
Snake works for me, wouldn't be opposed to seeing Raiden but I'm not sure he's needed, along with being another anime swordsman.
Now, if any of these companies wanted to rep additional series, they each have a few options with varying degrees of likelihood:
SEGA
Sega could try including Nights, a character from Jet Set Radio, or someone from Super Monkey Ball if they really wanted to, but I don't see high chances for any of them. What I think would be more interesting but also unlikely would be someone like Kazuma Kiryu from Yakuza based on the series' current popularity.
Capcom
A rep from Viewtiful Joe would be cool to see, but Capcom also has the Devil May Cry series to pull from. I would expect a rep from the latter before Viewtiful Joe but I don't expect Dante in Smash anytime soon.
Bandai Namco
Bandai Namco of course has Dark Souls, and Solaire already has his own Amiibo, apparently, but I'm not sure what another swordsman could bring to the table that Smash doesn't already have. While I'm not really familiar with Soulcaliber, Tekken, or .hack, there might be characters that some people would like to see in those series.
Square Enix
SE has a number of series that they could draw from, including Tomb Raider, Kingdom Hearts, Chrono Trigger, and Nier, among others. I could see Lara Croft, Sora, or 2B fitting into Smash quite well but can't say how likely anyone from these series is to appear.
Ubisoft
Nintendo has been working with Ubisoft on those Rabbids games for whatever reason, so it would be nice to see Rayman appear but they'd probably put the fucking Minions in instead
Konami
I would love to see Simon Belmont in Smash, especially now that Castlevania has re-entered the public's eye with that Netflix series. Him or or Sparky from Rocket Knight.

minecraft might not be the talk of the town these days but it definitely stole the lime light for a while, its still going strong and it set the standard for the ever popular crafting survival genre while allowing peoples creativity to flourish in ways never thought possible in a video game.

It'd be something down the line. By the looks and knowing what Sakurai's mentioned in past interviews, Ultimate's roster and designs were decided and settled before Splatoon 2 came out. All the Inkling outfits, stage, and remix(es) are from the first game with Lil' Judd a nod thrown in. Sakurai confirmed that the only reason Greninja was put in so close to XY's release was that it was one of the earliest finished designs at the time and he saw potential. Base Ultimate will only have Pearl and Marina as trophies and possibly a track or two as Splat2n content, but transferring model work over of Octolings and using the same Inkling weaponry with maybe a new Final Smash like the Sting Ray could be a simple and effective Echo DLC
