Both 1 and 2 are great, since 2 is a direct sequel taking place only a few weeks after the events of the first one I'd suggest playing that first.
When you're done with 1 you should play Gothic 2 Night of the Raven expansion (rather than vanilla) since it's the base game but with added content throughout the game as well as rebalancing it.
The only reason NOT to play NotR would be because it's a lot harder, but that's another reason for why you should play Gothic 1 first to familiarize yourself with the controls.
Gothic 3 was rushed by the publishers and is a bit of a trainwreck even with the community patch. It's honestly worth playing if you're into 1 and 2, but don't expect greatness from it.

Either you play it completely without mouse, which is fine. Or you rebind some shit.
