Dwarf fortress has a lot of mechanics and interactions between them while being relatively small in size.
The generated worlds are also huge but they do weigh a ton compared to the executable. Also procedurally generated content is kind of cheating.

The immense amount of time it took to individually inspect every single piece of gear before selling it in order to hunt down specific stats needed for your build was fucking retarded.
Most loot heavy RPG's like Diablo at least have the common sense of not throwing literally 100 pieces of different gear at you towards the end of a mission to sort through.

I liked Nioh a lot but I think I only played like half of NG+ before getting bored, I ended up running past more enemies than fighting them in NG+ because they became so spongy without ideal drops. I hope Nioh 2 dials down the loot aspects a bit because the base combat was solid and I don't wanna reply on random stats too much when I have solid combat options

Yeah I got about 135 hours in it as well, barely touched Abyss.
The gear stat transfer thing wouldn't be as annoying if not every single piece of white gear (for the appropriate slot) had the potential of rolling just that ONE delicious stat you were looking for.

I think procedural content is underrated. What is generated by an algorithm in Daggerfall can be much more interesting than things handcrafted by underpaid wagecucks in Skyrim. Morrowind only has good content that needed to be handcrafted due to a focus on lore and story.

I'd argue that sandbox games, GSGs et al don't really count. Sure, you can play them for a long fucking time, but there's not that much hand made content in the form of quests or missions to be found. Also, modding is "cheating".
That being said, I'd nominate Fallout 2 and New Vegas. They really have a shitload of stuff for you to do. Also, GTA: San Andreas has a pretty staggering amount of side activities to work your way through, ranging from playing games on a console (pity they scrapped the feature to buy more games) to truck driving missions.
And speaking of insanely elaborate side content, the minigames in System Shock 1 and 2, where you could play a scaled down version of Wing Commander (with over 20 missions) or an Ultima clone.
