I played a demo of this series on ps2 as a kid and I am wondering what the appeal is. The Dogfighting didn't really do anything for me. Felt repetitive. You just locked on to other jets and shot missiles at them the whole level and that was just about it. Is it the story?

Ace Combat games are really a sum of their parts. Consider the trinity games- they're known for having fitting OST and matching those tracks well to the given mission, ingame voice comm banter creating a sense of immersion, a level of replayability afforded by letting you choose your plane and weapons (and their progression) while chasing after S ranks, and solid lore exposition that gets you attached to the different squadrons/nations.
Consider 04, you start out as a random pilot in the Mobius Squadronand by the end of the game you're a legendary pilot and interspersed throughout you learn about your rival the Yellow Squadron and the progress of the war going on in the background. Interspersed throughout you're tackling semi-plausible superweapons like Stonehenge and Megalith.

Sounds like you played it on easy. Try any higher difficulty and you might see it. Besides the gameplay, the story is fun and delightfully cheesy. Sorta like an alt-universe Top Gun at times. There's also the soundtrack, which is always fuckin rad.

It's a combination of story and gameplay. I never played the demos, so I'm not sure what part of the game it was showing, but the dogfights get a little more interesting than that. You usually have options in terms of planes and special weapons, as well as an objective which might shift how you fight, or which enemies you go after. Harder difficulties give you less chances to fuck up, and the enemy AI performs a bit better evading your missiles, requiring you to fire at a good angle.
There are also ground bombing missions, which can get hectic with SAMs flying around. 5 and 0 add wingman mechanics, and have more complex stories, but all 3 of the PS2 games are well-written to never sacrifice gameplay for story.
04 can be a bit underwhelming compared to its successors, but I recommended starting there since it's more concise, in both story and gameplay (it's not very long, and there aren't any bad missions)
Ace Combat is less of a flight sim as an arcadey flight combat game, where you can have 100 missiles and make impossible maneuvers.
They can all be emulated fairly well, though 04 is a bit glitchy. Recommended order is 04->5->0, then try out the rest of the series (skip Assault Horizon and the gba one, unless you like pain)

I really enjoyed the gameplay of AC:I. At higher levels the planes could fly incredibly fast and do a 180 in a split second, and the fact that you're competing against other players and not just braindead AI made it that more fun. You could also tune them with unlockable parts. If there's anything PA could do perfectly with the Ace Combat series, it would be to create a game where the main focus is multiplayer with a small single player campaign. I honestly don't care much for the cheesy story in the PS2 titles, but if they brought back the simplicity of AC2 or branching missions in AC3 and the PSP games it would be sweet.

I just had a thought. It might be just a gimmick or something, but what if there was a co-op copilot mode in AC7 where one person actually maneuvered and the other was in charge of weapons? I wasn't trying to sound like a troll or anything. By all you did that is all it felt like you did. I mean there wasn't much else to the demo. Look at something like Star Fox. It's a completely different game for sure, no denying that. But there is level design, secrets, crazy bosses, squadmates that give you helpful info and open alternate routes. It's not comparable but I think you get the idea. It just felt like flying in a giant box. It didn't feel designed I guess? I love Dogfighting games. Like Star Fox's all range mode and Crimson Skies. But those had level designs, crazy boss fights, characters, ect. I get what you're saying though. Not trying to shit on Ace Combat. I have been on /v/ for over a decade but Ace Combats sacred cow status never made sense to me. It just didn't grab me back then and was wondering what I missed.

While I'll say music and story carry the AC games hard, the gameplay is still crazy fun, especially when you test your own skills and all the crazy shit you can do at the highest difficulties.

Because you're flying low. There's not much in the way of obstacles in the sky when you're flying a plane. Even so, AC does have a variety of level types, such as flying through ravines, through tunnels, into ICBM silos, through giant nuke satellites, etc.

5 and Zero run perfectly on the latest builds with mipmapping turned on. 04 still has the black plane and sun texture glitches in hardware mode (apparently because it was coded really weird compared to the other two) but if you have a beefy enough PC you can run it perfectly in software mode.

I played the short campaign of Infinity before it shut down. I don't care much for the games that take place in the real world instead of Strangereal, but it had some neat moments so I can't complain too much.
