90% of Japanese games are about Japanese mythology/history (go figure), and most every Western game is an even split between Norse Mythology and Medieval settings or Middle Ages historical with a sad smattering of WWII games. There's only one game about Native American mythology and everyone here already knows it and has played it.
Outside of RTS games, there are so few story-driven games that aren't set in any of the above, so let's talk about them.

I remember there being a first person point and click adventure game, set in ancient Egypt. Besides that, I guess Quest for Glory, it had games set in, medieval Germany, Ancient Arabia, Not-Egypt, Not-Transylvania and Ancient Greece.
There's also Prince of Persia, but that's more middle east.
Also, I doubt it's 90%, maybe 40-60%, a lot of their JRPGs have nothing to do with Japan or ancient Japan, a lot of them are more European in nature, but with anime portraits, even action games like Devil May Cry or Bayonetta, don't scream Japan

Arthurian/Euro and Eastern/Nip/Chinese legend has all the cool stuff: castles, kingdoms, powerful warriors who can pull off incredible feats of skill and might, magic, demons, giant monsters, ancient evils, and so on.
Native American lore is boring shit about 'the great spirit' or that one time that a bird tricked a fox into eating the moon. You could probably do some artsy fartsy kind of games with that, but most people aren't going to be enthused about it. Ancient Egyptian mythology has some cool shit to it, but it's some of the same stuff we already got with the other good myths, just with more people with animal heads. And middle eastern mythology.. well, all of it is just bastardized stories from the Chinese and Europeans who were traveling through their shitty lands.

Lots of settings deserve more use in vidya. Serious sam games like to give you a bit of colorful variety in their levels but it isn't really a story-driven game so besides the pretty view you don't get much out of it.

The reason why you won't see any games about other cultures is because people are afraid of the idea that they'll offend it somehow. It's why Ubisoft has always had that disclaimer at the beginning of each AssCreed game. Speaking of Native Americans and Ubisoft, they did do AssCreed III, which had some lore, but the other problem is that Native American history is entirely oral and therefore incredibly diverse, meaning that any interpretation is entirely local to a single community rather than the entire group.
