PS1 games are pretty good. You can start with release order, but at PS2 you can skip Nine Breaker because it has no plot and it's just a bunch of challenges and pure fanservice for PS1 AC nostalgiafags. And, maybe, you can skip Formula Front because the main focus of that one is making your AC teams for AI duels, though you can pilot your AC yourself anyway. It's still great though.
Waiting for stsble PS3 emulation of AC4-VD games could take too long, so you can take your time with the previous gems.

MechCommander 1 set the bar really high when it comes to mission and encounter design, other celebrated tactics games such as Jagged Alliance 2, Silent Storm and Front Mission 3 ended up being lackluster to me. I quickly learned that the genre is more about complicated core mechanics and unit/party customization and that the varied and suspenseful mission design of MC1 is an outlier.

Basically, every Mechwarrior campaign is rather lackluster when compared to its Mercenaries counterpart. Mechwarrior 3 is a notable exception because it has a cool "Stranded in hostile territory" campaign where you have to make do with only salvage. However, 3 is also a weird game that is difficult to get running on modern PCs, so good luck.
My personal favorite is MW2 Mercs, but it's unfortunately buggy as fuck, to the point where I had to stop playing my last campaign because too much weird shit was happening. My ammo counts would be all over the place. One time I started a mission with somewhere around 4 times the number of AC20 ammo I had loaded into my Victor. I also got completely different prizes from the Solaris arena circuit than the victory screen said I got, though I didn't really have cause for complaint. Seems like all the stuff outside the actual missions in MW2 Mercs is buggy as hell.

I want to suggest J, since its AI is easy to exploit, but the stages can drag on and on later due to the game's constant reliance on enemy reinforcement waves. OG 1 and 2 were officially released, but their translations are sorta iffy, and there are a good number of water stages in OG1 where you have few units suited to underwater combat. There's also Alpha Gaiden, but to be honest, I kinda skipped that one since it's a sorta-sequel to Alpha 1, so I can't tell you anything about it.
The two OG games and J are on the GBA, and Alpha Gaiden is on the PSX. To my knowledge, those are the only ones that are both available for emulators and have 100% complete English translations.

Can't speak on translations since I only play in Japanese, but as far as emulateable and good, W on the DS and the Z series are good. Z1 on PS2 I don't care for much myself because I don't like squad games, so I'd almost recommend skipping straight to the Z2 duology on the PSP for that reason alone. You don't need to know much from Z1 anyway and they cover it all in-game as is. Outside of emulation, both the 3DS games, UX and BX, are complete standalones and solid titles, as are the most recent titles, V and X for the Vita. Again though, I have no idea on English status of any of the titles listed, just vouching for their quality as good games.

How is the farm defense mission "tedious"? I can understand bullshit because if you don't expect to be up against a heavy mech and don't bring one along yourself or set up a minefield specifically for that mech you would be fucked. But you would at most have to replay the mission 3 times to get the strategy down, and the mission is like 10 minutes long at most.

Main series is turn based RPGs. You control up to three medarot, each have three attacks depending on the parts you equip it with. It's kind of like Pokemon in the sense that you collect all sorts of different medarots, parts and medal and level them up.
Second game introduced Medaforce, a special attack you need to charge up and is good for last resort attacks when all your parts are already broken. Third game introduced transforming Medarot so you had more attack options aswell.
Most enemies are fairly easy but sometimes your'e gonna need some thinking ahead. Like which part to use on that specific Medarot, what not to use and so on.
Spin-offs include several actions games and one SRPG on the GBA.

The Gundam Breaker games are great games where you build plastic gunpla figures and then battle them out in VR like Build Fighters. Okawara's style is typically a clean and simple approach. His work is usually boxy, like the Gundam or Daitarn 3. The only MS with clear German soldier design asthetics are the Geara Zulu and the Zaku II Fz B type head.
Neither of these two Mobile Suits were deisgned by Okawara, The Zulu was designed by Hajime Katoki, known for his work on the Gundam Wing EW suit designs.
Yutaka Izubuchi designed the Fz. And originally it was meant to be the Zaku II. But it got backlashed, it was salvaged by being turned into a late OYW Zaku II variant that became a by-product of the united maintenance plan.

As of the Dark Age, Mechs aren't rare, they're fucking everywhere, but they're also wildly varied due to how many old designs made a come-back and how many prototypes were coming into production, then you've got things like the Titan TI-1A, which was designed in 2787, but only really appeared as the TI-2P Titan II in 3071. In between those two dates, you can imagine a hanger somewhere in the periphery states holding the designs and one or two semi-functional prototypes that could be mashed and jury-rigged into a functional Mech nobody had seen before.
I don't understand why things like that aren't used in more Battletech games, instead of "Here's a new Dropship you've never heard of and has never been mentioned in any other source material!"

As other anon said: You build and program mechs to fight other mechs. Programming is done with linkchaining modules so it doesn't go full AUTIS-100, but the system allows insanely complex designs.
Give it a try, there really is pretty much nothing like it.
Shit gets real in EXA when you unlock intermech communication and start adding dynamic tactics changes.
