The fact that the game seems to be going back to the normal gameplay function as opposed to the car seems like it'll be fun again, so long as it doesn't require two switches.
Here is how Mario Party 9 and 10 failed:

>fucking rutheless
>minigames had variable outcomes and if you didn't win you risked losing a shitload of coins
>1 vs 3 minigames could leave either the 1 broke or the 3 broke and a huge shift in money
>needed to invest in stars to avoid coin shit
>lots of strategy on the game board and had to get good at the minigames to not get raped
>mario Party 2 - 8
>the minigames are "safe" with the winner always getting a set 10 coins and the losers losing nothing
>only betting battle minigames risking a loss of funds
>boards still revolve around coins and stars so there is still a dynamic of planning
<9 and 10
<the car forces everyone to move as one
<this could still work out but…
<coins and stars are removed
<without stars, there is no investment or anything that would push one player above the others and encourage a race
<only thing is a coin replacement
<minigames don't involve the high risks of mario party 1, so the winner is decided in the first 5 turns
<no board strategy + no minigame strategy = dead game
This looks to be heading back to at least 2-8 ground.

You can. Multiple Switches just ad more gamemodes. For example, four players can split into two teams, each team taking a Switch, then lay the Switch on the table like a board game, and some minigames have added functionality if played between linked Switches.
It's completely optional, and can still be played with just one Switch.

Yeah don't worry. All the minigames can be played with just one Switch. The multiple Switch part from the trailer where they connected the Switches for the tank minigame, that's an optional gimmick. Everything can be played on the TV, or just one system.

I actually had to do that in MP1 when fucking CPU peach robbed me on the last turn. I had mopped everything and had over 300 coins, but the bitch grabbed me in the crane game and in that version of the crane game, you lost 50% of your coins to the grabber. Oh, and she was still on "Easy", but even using the elbowflex method of speed mashing the button, she still dropped me in the damn pipe. Lets also remember that coins and stars were needed to buy shit outside of the board games in MP1, but CPU players didn't add their shit to the pot. But yes, I switched her to human for the end results so that her bullshittery went to the pot anyway.
