In the first game, you could hold a button and make it look like you're praying, and guards who would normally become hostile towards your would ignore you. Every major city had guards at its gates, and you could enter the city by pressing the "pray" button while next to a group of monks, and you'd sort of become attached to their moving node, and you could pass through the guards this way. During combat, you could break line of sight and sit on a bench or hide in a hay bale to throw them off your trail. The second game introduced factions that you could use to turn attention away from you for a brief time. You could hire courtesans to shake their asses for guards, which would keep them occupied for a time. You could hire thieves to steal from guards, who would abandon their posts to chase down the thieves and try to get back whatever was stolen from them, and you could hire mercenaries to fight guards for you and keep them busy.

Later entries added other "stealth" mechanics, such as the ability to blend in with passing NPCs, the ability to crouch in heavy brush, and the notoriety system (basically, every time you kill a guard, a meter fills; when the meter fills completely, the city guards will constantly patrol the streets and look for you; in order to prevent this from happening, you could bribe heralds to get them to stop talking about you, among other things). That's about it.

It was never truly a stealth series to begin with.

I've only played game one and two of the Ezio trilogy and I can say I hated the supposed stealth the games had. It was incredibly annoying to have to follow somebody only to have guards catch a glimpse of you and say, "WHO'S THAT SUSPICIOUS PERSON? BETTER TAKE A CLOSER LOOK." The game graciously allowed you to distract the guards by various means but it completely ruined the flow. Oddly enough the multiplayer had the right idea about blending in and looking innocuous as possible. In multiplayer there was about 8 character models that were effectively cloned and scattered around a set area. They did normal npc things like walk around, had a seat, or chat in a group. You and the other players then chose one of the existing character models and had to assassinate another player while watching out for assassins yourself. Of course if you ran around like an idiot you are an easy target. If you blended in, you could suddenly leap out from a bench and stab your target without notice. It was actually pretty enjoyable watching and looking for discrepancies between player and computer.

Do you like how ancient Greek pottery looks? Do you want to play a game based on that artstyle, where you're some random demigod who goes around fucking the shit of various greek gods up in grand, varied levels with an interesting combat system? Play fucking Apotheon.

Want a roman game where it's both a stealth game where you can occasionally dress like a trap and a sick ass Gladiator fighting game that plays kind of like Dead Rising 1? Play Shadow of Rome.

Anyways, it's really a shame to see what's become of the series. It lost its identity as a franchise after the Unity fiasco. I never really liked it that much, but I always looked forward to the next game because I could see it, no matter how gradually, improve or at least try to in the case of III. I knew the convoluted story would go downhill after Desmond died, but the gameplay was so close to being good. The fact that AssCreed killed PoP is a blessing in disguise, imagine a new Prince of Persia game made by CY+3 Ubisoft.

I remember, back when PoP 2008 was revealed and fans speculated that the protagonists were not only brother and sister, but also the sun and daughter of the Prince, from the previous games and Farah. You know it would actually been an interesting game, have the main protagonist know about the dangers of the Sands of Time or unknown magic, and what happened to his father, but something happens, his kingdom and family is threatened so he makes a deal with the devil and picks up the dagger of time or some other ancient artifact that will screw him over in the long term.
