I used to be like you, wanting to play a ton of new (to me) games so I could experience as much of the medium as possible. The thing is though, most games are forgotten for a reason. When it comes to sheer enjoyment, you get the most enjoyment per hour by playing the games you enjoy the most and sticking to them, instead of constantly trying new games that you may or may not enjoy as much. That isn't to say you shouldn't try new things or try to experience as much of gaming as possible, but working your way through lists of games that otherwise wouldn't be on your radar due to some arbitrary list of "bests" isn't a very enjoyable way to go about it, in my opinion.
Instead, you should take a look at the games you spend the most time playing and ask yourself what it is you enjoy about those games. It can be the mechanics or something as simple as a character design or setting. Then look for other games that appeal to you on those levels.
Whatever list you end up with by doing this will probably give you a far better time than going through an agregate of many different people's "bests", because every person has different taste.
If you're seeking something different because you're burnt out on the types of games you're playing, take that same list and look for games that are the opposite of the qualities that you mentioned, or try genres that you don't normally play.
