Are there any games developed AFTER Morrowind that allow you to equip individual pieces of armor (gloves, pauldrons, chestpieces, belts, necklaces, and left/right sides are separate) AND see them visually represented on your character in the game world?

It kinda feels like every game after Morrowind consolidated equipment down to boots, gloves, chestpieces and pants with little room for customization or asymmetry.

Don't believe so. Kingdom Come let you equip a lot of stuff similar to Morrowind but not different gauntlets, pauldrons.

All this stuff only makes sense for light armor and even then it's a stretch. Armor pieces need to complement each other and be compatible at the joints, so there needs to be a lot of modeling work done to make all the models compatible just so that you could look like a clown.

Oh, and Dragon's Dogma kinda has more slots than usual: helmet, body padding/chain-mail, body armor, gauntlets, greaves, lower body padding/chain-mail, cloak, accessories. Pauldrons come attached to body armor, but can be removed if you equip incompatible cloak and some cloaks are actually pauldrons.

And armor mix-and-match was one of the very BEST parts of Dragon's Dogma, and one of the good parts of Morrowind. There's also Monster Hunter which, even though it consolidates into 5 pieces of armor, has a staggering amount of skill customization and armor mix-and-match going on with just those 5 pieces.

All three games look great with mixed armor too, so it's not as if it's hard to do.

Mabinogi is kinda like this. Almost all equipment is statistically identical, it's the enchants you put on them that determine your build. So you can wear pretty much whatever you want and still play the "meta."

OTOH it's worse when it comes to the thread's topic because shirts and pants are combined into a single piece of equipment.
