Why is this always the fucking thing? logically using a sword and a shield with heavy armor makes sense, and using big weapons like a claymore makes sense for light to medium armor because it's fucking heavy and if the enemy is hitting you with a short weapon you're doing it fucking wrong.
Also maximum maneuverability, then damage is the real deal unless there are secondary nearly impossible to avoid damage sources or you are in a battle that exceeds 3v3-5v5 (but not if the map is fuckhuge and you are fast).

Its a balance thing. Strength and dexterity being very different is purely for gameplay purposes, giving you an incentive to mix things up.You have to have drawbacks in some form or another otherwise one play style/build is the de facto right choice. Magic users are typically hard hitting but squishy with low health and wear robes. Dex users hit a lot weaker but faster or perhaps with more precision so deal faster DPS. Strength users hit hard but move slower.
Its video games nonsense but its good video game nonsense. Of course, realism has its place too.

Shields compensate for gaps in the armor, especially on the legs. It's why they got smaller and smaller as armor technology improved, eventually becoming more of a parrying tool like the buckler as plate came into existence. Someone in full plate doesn't need a big shield, because his armor provides all the coverage he needs. Heavy armor and a claymore is exactly what you'd wear if you can afford it, because it means not having that shield won't hurt nearly as much. Also, a sword and shield is far and away heavier than just about any two-handed weapon, maces included, and the weight of weapons is negligible next to armor.

Thats because dex is still a form of str, just like how con is how strong you stomach is or how many times you can get punched in the face. They are all "body" stats depending on the system, which I'm sure devs just put the name there because thats what they always saw there. Technically wisdom is mental reaction time, which by definition should be dex.

Endurance does exist as a separate thing in the real world, but it has fuckall to do with taking a punch or drinking poison(which is more some crazy feat).

Con really is a worthless stat, its just tied to the "how long until you die" stat. I think con was suppose to represent how "healthy" your organs are. Why concentration is a con stat skill makes 0 sense, but then con would have no skills tied to it. They needed casters to have to think about dumping con because any low hit dice spell caster already knows that con will be fuck all to them anyway.

The skill system in 3.5 was pretty fucked though since there are too many skills and way too little skill points, where classes like Paladin, who should really be able to ride a horse, and be some what knowledgeable in religons, while still being able to negotiate Diplomatic situations and tell if an evil bastard is lying, will probably not be able to do any of those things. Even worse if int is a dump stat which it usually is for them. Then you have skills that pretty much do the same thing like disable device and open lock, hiding and moving silently, jump and tumble. First time I played DS1 I went with a dex build.
I had played Monster Hunter for years so it wasn't too outside of my norm and was highly enjoyable as I spent a whole day on a few bosses.
I thoroughly enjoyed it.
Did a 2nd playthough with Strength, running up to shit with a zweihander in heavy armor.
It was easy mode.
I'd cackle like a madman when I faced Artorias again and could just eat the hits while I'd bust his ass open.
Dex allotted greater difficulty and thus the greater reward, but Str was so absolutely cathartic.
It was the same duality I would struggle with in Monster Hunter but with Monster Hunter my answer was most often Greatsword.

As I previously outlined, the Reiter was more capable for gemgunning, since it had better innate scaling and had the nigh guarantee of hitting most of the time; with 100% damage rather than the sharp dropoff/high spread of the Spear (even showed in the vid you linked). It had less of a cooldown animation and had the added benefit of having a more CQC focused moveset which in turn complemented the range of the shots.
Secondly, to reach those levels of damage the gemming would be literal cancer. To get those levels of damage (+67.5 ARCetc), you would need perfect FRC gems, which take hours/days to grind. To get low/moderate tier gems, you would still need to reach Defiled Chalice/Ihyll and grind a good bit, which means at minimum beating bosses that have high ARC resist (Undead Giants) and enemies that will flat out oneshot you at 10 vit with shitty hitboxes alone (Bloodletting, Rom2). At best you did endgame farming for earlygame bosses, making you a DSPtier shitter. Why did you level BLT again, regardless? Why are you unironically watching reddit, and an infamously shit player at that?
I'm going to make the guess that you have never played this game before. From minute details like spelling Bloodtinge as blood tinge/ Yhar'gul the Unseen Village as 'yargul the invisible village' or using a resource-heavy PvP build in PvE; to pretty fucking major inaccuracies like being about 20 levels higher than you should (at absolute minmax build at One Reborn) for an implied first playthrough where you 'found' the Rifle Spear a relatively hidden weapon most players miss, mind you or for any fucking reason levelling BLT when you have an ARC build.
