NBA 2K11 is the only realistic sports simulator that's semi-memorable tbh. It's the one where you can play as Michael Jordan and relive highlights in his career. Aside from 2K11, nearly every other realistic sports simulator is just frankly forgettable because they're sooo replaceable by their annual successors. Even the ones that might seem important (like those World Cup FIFA titles) are worthless once the next year's newest iteration replaces it.

Be kind of hard to make a good modern sports game since EA has got most of the licenses and I doubt people would play games that don't have the official teams in that sport. I doubt modern developers could think of a creative original sport or do something akin to Mutant League football anymore. Sports games are certified bargain bin before their release. You'd have to make something like a Rocket League stream bait game to succeed in such a niche genre which has a certain type of gamer that'd play them.

Release a sports game with generic teams, give the option to import pictures, rename teams/players/attributes/appearances to whatever they want and just cuck EA/NFL/FIFA/NBA out of it altogether.

Well, not sure about "good", but I do know that I really enjoyed UFC Undisputed 2010, 2011 and 3 at least. They were a lot of fun, and I still boot them up occasionally.
Haven't played any of the ones past them, though, because I'm not buying a console just to play shitty sports games and Bloodborne. The newer ones DO look very good, but I've heard they're plagued by typical EA microtransaction bullshit, so meh. Still, maybe worth checking out at least, provided you're interested in MMA.
