None of these games have a central protag with a clearly defined personality or character traits; the meme that the box-art set is the set the protag is wearing through the game "canonically" is dumb and always has been dumb, because every single souls game has choices that go from black and white to being straddling shades of gray. In DeS your world tendency and character tendency are ever shifting to the way you play and the actions you take, not giving you a total failure at any end of the spectrum to the degree that, in universe, there is no set path for you to go on besides killing every boss on the journey that matters and then killing the final boss(es); there is no canon path because they all basically get you to the end point in your story with a very slightly different road. Dark Souls is the exact same way, except it's simplified to being character interactions and completing or not completing certain quests; doing all or none of the quests does not enable you to a different ending. With that in mind, is it canon that you do all the quests? None of them? Only the ones with sieg? Only the firekeeper resurrection? There is no true canon to the journey of the games because the linearity is just for the sake of completion, an end goal. Never played dark 2 but I'm sure it's the exact same way, and Dark 3 has no weird paths either, so again, the canon of those games is completely made up with your own character in mind; they're a blank slate for you to pour yourself into and pretend how they would act and think and feel, which is the basic element of an RPG
Bloodborne is no different, despite being a game with completely different systems; the RPG elements are all for you to decide how you want to play and what you think your character would do; do you allow alfred peace? Do you resurrect the queen of vilebloods? Is the main character a collector? Does he main sawblade? It doesn't matter, the story hasn't ever mattered in any of these games for gameplay.
To hammer this point home, my friend plays bloodborne as a cop who is completely unaware of the crazy shit, making abstract concepts into simplified and direct ideas that a down to earth cop would assume if he were there and not going insane;

The point is the story is what you make of it, and the grasping at straws for what may be the plot or canon end or any of that shit doesn't matter because at the end of the day the story doesn't change how fun it is to play any of them
Fuck off with this shit and burn down all the lore threads, the thing we should be talking about is the fun times we're having playing the games and investing into certain builds or characters.

After some search, it appears this is a common thing but in my 3 years with the game, it's the first time I've experienced it. No solution to it either. Apparently, the servers might be overloaded which makes sense because BB is a PS+ freebie for March so everyone's bandwagoning.
