The original version of 3 has a ton of bugs, like the final bossfight playing one of the overworld musics instead of the boss music. It's the only version of it I played though, so I wouldn't know if the game would suffer from the new tracks. It recycles tracks a few times but they're so good I didn't mind.
Also you might get swarmed by anon's shilling 1 because it's the most basic. The original trilogy kind of works like a gradient. The 1 being just the core gameplay mechanics, 2 starting to branch out with more minigames, and 3 going overdrive with the minigames. I did a recent replay of the original trilogy and I struggled to get through 1 because it was so fucking boring. I thought I just was too old to enjoy the games again until I got to 3 which I was able to just power through. I even went back to 1 afterwards for the 120% finish and it was just jarring in comparison. Blob enemies, gold textureless icons, large empty levels, sound effects at lower audio quality (which I didn't notice at first).
