>but aren't half of the PS3 games worth playing PS2 remasters?
No, and the quality of the "HD" rereleases varies a good bit, with some being pretty decent, some being shit (or having been shit, in the case of the now patched ZoE2 HD), and some more or less average, with some graphical glitchiness here and there. In addition, most of the games selected for that treatment were popular, common games, as opposed to harder to find games that could have benefitted from another day in the limelight (and in the case of the Yakuza collection, that was left JP only).
>Which games you wanted remastered never got a re-release?
There's a number I wish got at least PSN ports, or competent collections, but that's more on combatting aftermarket scalper prices than thinking the games could stand to look better, or whatever.

Far as I know, X Collection is better on the Gamecube, but that one's pretty expensive, even by Gamecube standards (think last I saw was $60+ where I live), and I seem to recall some people saying the original releases of the included games were still superior, though I could be remembering wrong (actually not real experienced with Mega Man). As for Persona 3, I know FES is considered superior to base P3 (I'll admit that the original release has a better cover art than FES though), but from what I know it's debatable as to whether FES or P3P is better, as both have their pros and cons. For whatever reason, Atlus has yet to make a version combining the benefits of both into an ultimate release, or whatever you might call it (similar to how there is yet to be a version of Tales of Symphonia with the PS2's additional content but the better shadowing and combat framerate of the Gamecube original).
