I have a Intel Mac Pro 8 core loaded with RAM and a upgraded graphics card for HD video editing just collecting dust. Is it worth trying to mine some Monero on this or will the electricity cost fuck me? Also would solar panels offset the power issue any.

Assuming you already have solar panels and batteries, and live near the equator.

Otherwise the cost of solar panels and battery banks would ensure you never earned any for several years.

Additionally if you live in a place with shit sunlight, like the UK, there won't be enough sun to keep it running 24h, possibly not even enough to run it at all most of the time.

40-60 USD/month on cpu alone.

GPU look into electroneum, more profitable than monero curently and same algorithm. Do not try other algs, they tax the GPUs a lot more and will fry the thing.

Alternatively just sell it and straight up buy crypto.
