Are you implying only Romulus was destroyed; or Romulus was destroyed, and Nero and Spock traveled back in time, and altered all the timeline immediately destroying the non-bullshit non-reboot universe?

If the latter, then the original universe no longer exists. If the former, then Romulus has been destroyed but the reboot can no longer consider itself canon if Nero and Spock didn't go back…

The practical solution is to follow the mirror verse where blackholes sent Nero and Spock far into the future to fuck things up there.
