I'll explain this in as short an explanation as I can.
PNG files are broken up into sections. They're called "chunks" because some extremely juvenile people created the format. I call them "sections" because I'm not 13. PLTE is the palette section, IF a file is formatted that way. It contains (normally) 256 entries of 3 bytes each after xxxxPLTE where xxxx is a 32-bit number containing the PLTE section size. This is the color palette. Each pixel of the image is a reference; an index into that palette. This allows each pixel to be stored as 1 byte instead of 3 (one for each of red, green, and blue color channels).
IDAT is the section that holds the image data itself. There can be one IDAT section or a thousand of them.
Here's the kicker that nullifies ALL your work: everything you can look at in the IDAT sections will be compressed data. God Himself would have a hard time hiding any data in there. You really can't feasibly control what the post-compression data is going to look like, and that's what you're looking at - post-compression data. So anything you find inside an IDAT section is going to be - I hate to say it - purely coincidental if it makes any kind of sense to you. Compressed data is "white noise" and unless the image is one solid color, you're not going to have (feasibly) any control over what the post-compression data looks like.
Within the other sections, there are very strict formats declared for how the data they contain must be formatted. Hiding data in there would destroy the integrity of the section.
The PNG header at the start of the file declares the image width and height. You can't feasibly tell how much data is actually present, post-decompression, because the data is compressed! Simple, right? A file might have 2,345 bytes of compressed pixel data. But looking at it, you have no idea how many bytes that will decompress to.
"Metadata" is descriptive data that's not involved in the actual decoding of the image. If there is more pixel data than required for the declared size of the image, then that extra data will be ignored and you can indeed hide stuff in there. But you have to decompress it to see what it is. Post compression data will not show you anything meaningful if you're looking at the file in any kind of disk editor that shows raw hex data. You have to decompress it.
If an IDAT section is present, and the entire section is superfluous, then it will be the last section, or the last x sections. These may not be compressed, but if not, they would require a special building of the file with an app designed to do that. It's not difficult to do, but it does involve some custom programming to do it.
So that's the Reader's Digest version of what you're working with. There cannot be PNG files without compression; the standard does not allow for it. So what I've laid out will hold true across all PNG files..
