There are a lot of artists who officially illustrated Youmu at some point and I made a picture showing their respective art styles over time.
I also included their fan art for the sake of completeness.
ZUN is the sole creator of Touhou and therefore his depictions are arguably the only true canon ones. His art style is plain and unprofessional but has its own charm.
He also has the tendency to be a bit inconsistent with his designs, e.g. some characters suddenly have different eye colors.
Since he doesn't care much about consistency himself, his illustrators can canonize their respective art styles to a certain degree.
To be honest, I don't like his art style all that much, but his character design is unique.
I've ranted about this a few times already, but I dislike Youmu's depiction in Touhou 13.
My favorite art styles are alphes's and Hirasaka Makoto's. They've stayed fairly consistent over the years and are based on Youmu's depiction in Touhou 7 and Touhou 8.
The ones I dislike the most are Aki★Eda's and azmaya's. I like Aki★Eda's fan art of Youmu from 2006, but when she started illustrating Silent Sinner in Blue in 2007, Youmu was consistently depicted way to derpy.
azmaya's art of Youmu is completely out of character, but it has been getting better recently.

Officially? Not really. The official illustrators always seem to adapt the contemporary trend of moeness. But fan art in different styles is always welcome.
