What would you guys consider the ABSOLUTE minimum for a long term bug out situation? Let's say at least 2 years and up to an indefinite period of time.

Off the top of my head all I can think of is:

Knife, tent, plenty of rope, flint and steel, duck tape, lots of seeds (mostly beans, cabbage, tomatoes and possibly potatoes,) and as many rations, including water, as I can carry.

I'm well aware this is a shit list and that OP is a faggot, but anyone want to help me out? For the LARPers out there, think of this as a "I'm going to start a new colony but only have so much room in my truck."

You don't need a thing in your pockets, hell not even pockets on your clothes or clothes in the first place to start over. Just pick up a rock, throw it at a rabbit, use a different, sharper rock to skin it, and use it's fur as a pouch to carry more rocks.

The absolute minimum is a healthy body with a sound mind, and even then I am sure that some one-armed guy can figure out a way to survive.

Society started with a great deal of death and hardship. You're right in that technically civilization could restart from basically nothing, I suppose the better way to phrase my questions would be "What's the most efficient way to restart civilization without requiring too much input resources" if you want to get autistic about it.

It depends on the environment you're in, the knowledge you have and the skills you have developed. Can you hunt and fish? What happens when you run out of ammunition or break your tools? Do you know how to forage and make the most out of natural resources in the area? Do you know how to grow food and look after your animals? Can you take care of your own health and treat injuries you will incur? How much help do you have? What opposition will you have? What are the immediate and long term dangers of the environment you'll be in?

All those questions are going to have a multitude of different answers depending on where you are, what you know and who you know. Like other anons have said, the variable you can exert the most control over is yourself; get fit, expand your knowledge and develop skills. Find like-minded people, if you can.
