In theory you could fire any projectile you wanted out of a muzzle-loader. It's not likely to achieve a similar muzzle velocity as a weapon designed to use modern propellants. The reason that you see people using traditional spherical shot is that people using black powder weapons generally use them for interest or fun - and using the traditional ammunition is a part of that. If you wanted to you could build a black powder cannon to fire an ATGM, it would be kind of pointless, and you'd need to make sure that the burning powder didn't affect the missile, but detonating black powder is just another form of chemical acceleration.

It wasn't wholly uncommon for unprepared defenders to load cans, glass, scrap metal, etc. into cannons to simulate shrapnel shot. They're smooth bore, anything you can fit down the barrel and have a wad rest flat-ish on will shoot. If you're asking in the context of 'what did/do they fire' the answer is for the most part round balls.
