Because to record our best generating and storage capacity is about a thousand antihydrogen atoms, and they were only trapped for about a quarter of an hour before escaping containment. Then there's production cost and time… It would take thousands of years and about a 25 billion dollars per gram to produce antimatter effectively.

What are even phasers? I can understand lasers, blasters, plasma guns and railguns but is there any explanation as to what are phaser beams/bolts made of? Some kind of exotic energy or particle maybe? They seem very powerful.

The actual name comes from "photon maser," which was one of the potential names for lasers (which comes from "light maser") floating around back in the day.
