What your question is phrased for:

Depends on the method. If you are using stuff like paintballs filled with toxins, I'd use a combination of giant hogweed extract and capsaicin in moistened form. This will cause anyone hit by it too be unable to go into direct sunlight. If they do without cleaning themselves, they'll pretty much burn their skin off any effected area. Giant Hogweed is some nasty shit.

As for what the capsaicin will do, any open wound which was hit with giant hogweed, will blister, and therefore the capsaicin will enter the inflicted areas, and cause what could only be described as a pain of absolute burning fire.

If the person doesn't pass out from shock, they may attempt too kill themselves from pure pain.

You're right about the poison. They're only very toxic of they eat certain type of ant, I believe. They definitely keep their bright colors though. My dad kept a terrarium of dart frogs when I was a kid. The most poisonous one is dendrobates terribilis. Their bodies contain 1 milligram of the toxin which is enough to kill about 20 adult humans. It makes your muscles stop working so you pretty much just instantly go limp and your heart stops beating. Crazy shit.
