I'd say the mainn difference is in the techniques used to draw faces. In the 80s you could actually tell the race of a character in manly anime. The best example is LoGH, where you can kind of see how the great defender of democracy is a half-chink Mischling. That's because they actually draw those faces, even if and when they used templates. Nowadays the face is a flat surface and they put template eyes and mouths on them. Really, it's just like how fucking South Park does it. This is why so many characters have the same faces, and also why you can recognize some characters based on their eyes and mouth and a few lines (think of Chaika, if you are familiar with her). To compensate for this they try to differentiate characters based on their hair, and to a lesser extent their eye colour, hence all those strange colours and extreme hair styles.
Also, they often have retarded mouths when shown from profile, and that too is because the face is a flat surface. Instead of drawing a normal mouth from the side, they again use templates, and so it looks like the animu girl in question has her mouth on the side of her head.

IMO Lum Invader was the first fully fappable artstyle and objectively way ahead of its era. Never really liked the more traditional Captain Harlock / Battle Ship Yamato/ [insert generic space opera] artstyle of the 70s-early80s, especially given it was cloned sad-expression euroboo female chars (that almost always ended up being blonde for some reason) with their slightly buffer, but otherwise identical, male protag version.
Early 90s looked awkward too but they were on the other extreme.

They don't use "templates," and "sameface" has been around for decades. It depends on the design style, and male characters are more likely to have detailed faces than female characters.. Not everything back in the day looked like LoGH. Anime has never generally put much stock in detailed faces, the design details are focused in other areas (which almost every Westerner ignores in favor of completely fixating on the face).
You can go to any discussion about anime on any board or any site and there will be very little variance in what people say, because it's all just a circulation of memes and very few if any people watch anime to any meaningful degree. It's very rare to even find people with an accurate grasp of what's airing during the on-going season.

Area 88 - It's about a pilot who was forced to fight in some middle eastern conflict as a mercenary by an evil businessman. It's great if you like old fighter planes, though it ends on a cliffhanger that's only resolved in the manga, which to my knowledge hasn't been fully translated yet.
Gundam 08th MS Team - About a small squad of mech pilots fighting in not-Vietnam. It's really good, but it has a sort of Romeo and Juliet side story that kind of becomes the main story towards the end. Some people love it and some hate it. Personally it's my favorite Gundam anime.
Gundam 0080 War in the Pocket - The story a group of Zeon soldiers sneaking into a Federation colony to destroy a new kind of super mech(the titular Gundam) as seen through the eyes of a 10 year old boy who befriends one of the soldiers.
Macross Plus - Basically the Advanced Tactical Fighter Program in space with a love triangle and a vocaloid who's like a cross between Shodan and Hatsune Miku.
Patlabor - The daily lives of police officers who specialize in piloting mechs. The TV show, OVAs, and Movies are all exceptional, so you can't go wrong with any of it(except for the live action movie.)
Dominion Tank Police and New Dominion Tank Police - Like Patlabor, but with tanks instead of mechs and more comedic.

There are plenty of anime which delve into some serious commentary/discussion on things like philosophical ideas and politics. Ghost in the Shell comes to mind as an example of an anime which discusses the ship of Theseus and how that pertains to humans who turn themselves into cyborgs as well as the nature of massive government/bureaucratic institutions and how they eventually devolve into competing/fighting groups with zero accountability. A lot of anime with deep/mature themes often wrap them up in a way that appears childish on the surface, an example of this is One Punch Man which on the cover looks like a typical superhero anime with an overpowered main character but is really a commentary on the soul crushing boredom which comes with having a life with no challenge, mixed in with other social commentary.
Another example is My Hero Academia which by the end of season two has explored how we as humans struggle to prevent us from being defined by our individual lineage Todoroki being conflicted over using his fathers power, the idea of violence being a-okay so long as you have government approval how the main difference between a villain and a hero is that one gets paid by the government, how people idolise celebrities purely by their public persona how Endeavour is the number 2 ranked hero despite being a narcissistic asshole who beats his wife and kids, how easily even honest and rule abiding people can be corrupted the honest and rule abiding Iida having a mental breakdown and violating the rules of being a hero in a quest for vengeance against Stain, and others.
Then you have anime like LoGH and some of the Gundam series which are centred around intergalactic politics with themes of honour and duty.
You also have rare shows like the Monogatari series where the author uses a non-linear narrative to play 3d meta-chess with the viewer, with the tone, many scenes and individual lines of dialog (of which there is a lot), and even at some points the perceived genre of the show taking on new meanings with each re-watch of the series.

You would be correct if even 10% of adults actually understood those things, the themes of the show are partly a meta-commentary of real life and how even adults need those kinds of lessons due to how morally weak most people are and the shallowness and vainness of modern society. I didn't mean to say never watch it, but rather as someone new to the series to skip Phantom Blood and go straight to Battle Tendency. One of the things which stoped me from getting into JBA to begin with was PB, but after someone told me to go straight to BT I went back and watched PB after Stardust Crusaders and had a far greater appreciation for it. I don't think telling someone new to the series to watch PB with the idea in mind that its really DIO's story would really help.
