Abū Ḥāmid Muḥammad ibn Muḥammad al-Ghazālī said THAT?!
So there is hope of salvation, but it is essentially random? And not only that but Allah seems indifferent to the fate of his subjects, given this reading….why is he such a prominent name among the scholars??

Meh. He's one of many scholars. You don't always have to agree with him on every little thing. The man wrote 70 books. Why would you ficus on 2 sentences?

He never said random. And you're reading too much into these sentences. This is part of a greater discussion regarding the topic of good and evil and Allah's power. The asharis emphasize Allah's complete will and ability so they don't like saying that Allah HAS to do a certain thing, whereas mutazila believe that some things are objectively good and bad and Allah has to do the former.
The words care not may not be the most accurate translation either. It's not that Allah "doesn't care" about His creation in the sense that He leaves them unattended, which is what we commonly understand the phrase to mean, but rather that Allah Himself does not fear anyone else's judgement since He is the ultimate judge.
