My mother has kept processed sugar out of her diet for over a decade and I've talked with her about it. I personally eat very little sugar but I haven't cut it out completely. Don't expect any miracles.
1. You won't crave sugar.
2. Things with less sugar such as apples, berries, etc. will taste sweeter. Though don't expect to ever get the sugar dopamine rush of a can of soda through a strawberry.
3. The things with less sugar won't give you a sugar rush and crash, so you will feel more awake and have more energy throughout the day if you have been drinking a lot of sodas every day.
4. You will tolerate the taste of things with basically no sugar better, such as unsweetened oatmeal.
5. Especially if you are living in America you will be shocked by how everything has sugar in it. Not only that, how everything has high fructose corn syrup in it, which is the worst kind of sugar.
6. Lots of sugar will make you sick. After long enough drinking half a can of soda will make you feel unwell. Even though I still eat sugar just by limiting my sugar intake I still feel this. It's not just that I don't want to drink soda, I can't drink soda or else I will be sick to my stomach.
7. Once you cut out the empty calories you will loose weight. Doubly so if you eat more protein because you will fill up faster.
8. Cutting out sugar will make you more conscious about what you are eating as a whole. Being aware of what you are eating is the first step to reaching a target weight, whether you want to gain or loose.
While you are at the stage where you are aware of what you're eating and reading a lot of nutrition labels you would be remiss not to move on to more healthy food and start counting calories. That way even if you move back to eating processed sugar you know how it fits in your diet and you know how much you can let yourself eat. Even if you don't count calories keep a list every day of things that you eat and at the end of the week look through those daily lists of the previous week.
