Can I get good at cardio and bodyweight without cutting down a lot? I'm 205 lbs, big bearded tall guy and I want to stay big. But I find it's slowing me down. But if I get scrawny just to do more push ups and pull ups I won't be in any shape to beat off attackers.

Just eat enough to compensate for your excercise. It's that simple.

You're a Canadian male, don't worry.

Beating people off should come naturally to you at any size.

This x1000. You can improve cardio and not mess up gains as long as you adjust your diet appropriately when needed.
