Yes, if a character cuts itself, there should be blood, but in these "adult shows" it's a bloodbath for no other reason than just being a bloodbath, and guess who enjoy that the most? Teens. To give you an example, look at Samurai Jack final season, the whole show avoided blood even when it was common sense for Jack to bleed once in a while, other than red bruises, and when the "Mature" season came, absolutely not a lot changed other than adding blood when there needed to be blood, even when Jack killed Aku's Daughters, there wasn't a lot of blood, because that's not realistic either, and the moment Jack himself bleed out a lot he almost died, because that's how blood works.
That's not to say I disagree with you with cartoons being shit nowadays, but if you think Castlevania is some standard for future cartoons, just off yourself already.

The issue was never that I can't stand gore, only that the gore was fucking stupid.
