man is an old english word for human being

in the old english a male human was called a Wer, or Wæpman, from which we derive such words as Werewolf

a female human was called a Wyf or Wyfman, from which we derive Wife

basically 'man' was and is still is used as gender neutral term for human beings

so when the bible says that God created man in His own image, it is talking about humanity as a whole - both male and female

Being made in the image of God means being made in the image of the Trinity, which is primarily our Mind (our Memory/Subconscious=Father, Thoughts/Consciousness=Son/Word, Will=Spirit). However since the incarnation that was always known since the beginning of the world, God also knew that He was creating Man in the image that He would also assume with the incarnation, so it's twofold.

If you want to get really heretical, Jews believe that Adam was a hermaphrodite before God split him in two.

Of course, as a Christian, I believe that man and women manifest the nature of God in different but complementary ways, most perfectly manifested in Jesus and the Virgin Mary respectively (thus the Second Adam and Eve)
