The Catholic and Orthodox churches claim that you cannot know for sure if someone is saved. In the end it's all up to God. So how can they determine who is a Saint? Since saints are in heaven.

It's other way around. Church doesn't say that someone is damned. But she can say of someone is Saint.

God confirms it to them through post death miracles. The bodies of the apostles did the same so we are going off of this. The person is then also judged on how they lived their lives did they follow the teachings, did they help people even ignoring their own well being for the good of others, so on. Also if they died as a martyr they get some special treatment.

Sainthood is more of a title really sort of like being knighted.

How do prots know what the canon is if they don't have a table of contents written by an apostle, and all they have is church tradition of present the scriptures as they are?

Anyone who truly believes on the Lord Jesus alone and not in themselves is already a saint. That said, only the person in question can ever truly know if they are saved or not and have eternal life (1 John 5:13), nobody else can know. Judge not lest ye be judged (Matthew 7:1). However, if someone does no good works at all (the Holy Ghost would compel them if they had faith) we can reasonably say they are probably not saved/true believers (James 2:14)

It boils down to miracles.

If one can pray for intercession to a person who is assumed (but not confirmed) to be in heaven, and a miracle results from it, it can be reasonably assumed that the person is in communion with god in heaven.

You cannot know for sure whether you're saved…until you get there. You also cannot know that someone is damned, as there is always the possibility that a person who is not demonstrably in heaven may be in purgatory on his way to heaven.
