You think you're trying to be witty because there are old testament quote that suggest he can while the New Testament is emphatic that God can't.

We all know of this issue. Theologians have long answered it.

The best explanation, I believe, is that God does not change His mind. Christ fully explained the nature of God. Before that point, we have prophets - these prophets could hear God but could not understand Him perfectly. Thus, God changing the way He explained something to them, seemed to these prophets a change of mind- but it was not.

Is the bible true, of course, with the Holy Spirit it will always lead us to truth. Is the bible 100% accurate, of course not- it was written by fallible men (divinely inspired fallible men) but fallible men all the same.
