I have to visit Orthodox and Catholic services for a school assignment. When it comes time to receive the Eucharist, how do I avoid taking it without embarrassing myself? Back when I attended Catholic high school if you weren't Catholic you just crossed your arms over your chest. Should I do that or do I just awkwardly remain sitting when the usher comes?

Unless you're properly confirmed and not in a state of mortal sin, you should NOT receive the Eucharist

Receive a Blessing by crossing your arms as you said, although some churches may not do this

If the priest doesn't make a general announcement about visitors and guests being able to receive a blessing, just remain seated or stand to let people out and go back to sitting/kneeling. You receive the blessing anyway at the end, it's mostly done so people in a state of mortal sin or candidates/catechumen aren't visibly excluded. You won't be embarrassing yourself by staying where you are, so many Catholics receive communion when they shouldn't that the serious ones will respect you actually respecting the sacrament, not to imply that worrying about how other people perceive you is important during a Mass at all, just to reassure you that it's fine.

the priest will ask you if you want to take communion, normally you need to fast the night before and purify yourself (no fornication, etc).

if you don't want to take it just decline.

a line will form, don't join the line.
