We don't really do apologetics…
The following are representative of Orthodoxy IMO but I wouldn't call them apologists…
Modern authors:
Met. Kallistos Ware
Fr. John Behr
Ecumenical Patriarch Bartholomew
Patriarch Daniel of Romania
Vladimir Lossky
Dimitri Staniloae
Olivier Clément
Boris Brobinskoy
The Three Pillars of Orthodoxy:
St. Photius the Great (notably against the filioque as it was understood by the Franks at the time)
St. Gregory Palamas (notably against the Barlaamites)
St. Mark of Ephesus (notably against the Catholics)
The Three Holy Hierarchs, who sum up the patristic tradition and also are the foundation for many Orthodox canons:
St. Basil the Great

Mark of Ephesus: He's popular not for any one particular work, but for his opposition to the Council of Florence. For a complete reading of what was discussed at Florence, check out Joseph Gill's "The Council of Florence."
Papal primacy isn't one of their subjects, simply because Photius did not reject the Pope's primacy or orthodoxy in the end, Palamas didn't deal with the matter, and Mark of Ephesus's suggestion at the Council of Florence was simple: yes, the Pope can have any nice title… just as long as he is orthodox first. The Latins presented the responses of the Eastern bishops to the synodal letters of Popes Leo, Hadrian, and Agatho, as well as the writings of Pope Leo and of Emperor Justinian, and, for the scriptures, Matthew 16:17-19 and John 21:15-17. The Greeks responded by pointing out that the honor shown to the Popes at the ecumenical council were to honor their persons, not their office. I don't remember if Mark of Ephesus was present then though.

On the Papacy… I don't have my book with me on the subject, sorry.
