Yeah, it's just that in southeast asia and India, hot peppers were prevalent and became part of cuisine, everyone knows a little spice and pep makes a dish more palatable, and it became part of their cultures.
I also really love horseradish and wasabi, it's a different and short-lasting burn.. but the REAL wasabi plant in Japan is now rare, so pretty much all westernized wasabi is actually horseradish with green food coloring. It's even hard to get authentic wasabi within Japan, which is said to be even -hotter-.

I really want to try uni (sea urchin) but it's seasonal and the places around here have it on the menu but never carry it.
I also want to experience a fatty marbled tuna belly, (quality toro) but I can't find that here either;
I'd have to say flavour-wise I actually like mackerel, yellowtail, surf clam.. and tobiko uzura (salmon roe sushi topped with raw quail egg)

I find the emphasis to be too much on rolls, it's the sashimi that is lacking in quality as it's not a top seller, so they have fish that's been sitting around refrigerated for days if it's a non-typical order.
I know from experience that tuna and salmon are brought in daily but are usually transported frozen or semi-frozen. There are no fresh fish markets here really, not like in Japan, so for consumer-oriented sushi shops, there is no need to cater for specialties because the staple menu items are for westerners.
