In anime where the theme is Catholicism or inspired by it, things tend to go pretty crazy. Anime Catholicism tends to be a very loose adaptation to the real world religion ranging from somewhat faithful to barely recognizable. Depending on the series the priest is either an eternal celibate or married with children having a nun wife, a priest in-training son and a loli nun daughter. If it's a setting where demons are real, the exorcists will carry guns, swords and other weapons or superpowers to fight them. Being part of the Vatican isn't limited to humans, monsters can join in too if they are deemed to not be a threat and serve to benefit the church's causes. Non-humans in the church can be a demon archbishop, a vampire priest or a succubus nun. Though depending on the setting, the church might have a zero tolerance to these monsters and will kill all including benevolent ones. The concept of god is different in each setting, he's either a bit faithful to the biblical concept of god or he's a cute all powerful loli. Depending on the setting, god doesn't exist but the demons that the church fights do and the church will keep up the belief in god to the populace. The priests can be young guys and the nuns are hot young women or lolis, there's also trap nuns.
The pope can be of any age or sex, it can be either be a small shota guarded by an order of bikini armor clad ara/onee-san nuns wielding spears 24/7 or a high school girl with holy assault rifles in each hand and a gatling gun under her dress. The church might even have exaggerated influence in their world depending on setting, even having authority to cross boarders and carry out the work to fight demons the governments don't have power to. The church can either be an organization of heroes saving humanity or they're villains that conspire with dark forces behind closed doors.

It really just is an excuse to have badass priests, demons, or cute nuns. Tying them to religion makes it easy to understand where a character's morals may come from. You don't have to understand the demons either because they are, depending on the setting, a pure force of evil that can't be reasoned with and much be purged from the human realm. More cute nuns is always welcomed.

In general, Japan's presentation of cristianism is as precise as the west's representation of non-monotheistic religions.
I.e an excuse for different flavored stuff but in the end distorted by the author's own morals. Japan will present demons as morally grey (monster girls and etc.) and westerns will get someone to be the satanic figure of the setting.

Reminds me of older comic books where you would have demons in high positions in society and they were the ones running the show and causing all the corruption. They did something similar in a recent comic called The Black Monday Murders. In that one, a group of bankers used black magic from Mammon to get predictions on stocks and other events that'll make them wealthy. They always had to sacrifice a family bloodline known as "The Stone Chair" and "The Lance" would always be the one to do the murdering. In return, these families would also receive a ton of wealth. It's pretty good so far.

Meanwhile Japan has a terrible understanding of the abrahamic religions. They use elements of the various religions only because they look or sound cool.
