I watched the first episode, reread the first two chapters of the manga, then watched the anime again. I think it's a fine adaptation. It sucks that they cut out a lot of dialog and the adventurer's flashabcks, but clearly they had to do so to compress this story so it would fit in the one episode that could hook in new viewers. Hopefully they won't cut as much later. I also don't get the complaints about them toning down the rape, as apart from the lack of "fanservice" (if you can call it that) everything was there. My only complaint is that some of the emotional scenes fell flat. Priestess-chan was way more freaked out about him putting down the wizard girl in the manga, and the goblet-slaying scene should have been more dramatic.

You've answered your own question, the "goblin" he killed with water pressure was an orge or demon if I remember correctly and it was a hell of a fight for him. Keep in mind that at all times Goblin Slayer is wearing some of the shittiest equips he can because he only needs them to kill Goblins, which are relatively weak. He can't go big and flashy because big and flashy doesn't work in hovels. Even further, Golbin Slayer for his big tricks mostly relies on his inventory and unlike most bullshit magic settings it is not infinite and he can only prepare so much, going even further, his "team" is constantly restricting him with what methods he can use, forbidding fire and poison and flooding that he would normally use so he is getting progressively more creative as time goes by to compensate for handicaps.

The most important part of the manga is firmly established at the beginning. Golbins are weaker than a full grown man, but do not underestimate them or you'll get your shit kicked in going in unprepared.

I don't know about the LN but the manga really puts the rape away after the first few chapters. It still exists in the background and you know it's a threat. However they don't really show it too much anymore. It's shown in such great detail at the start to show the stakes and make you invested in the characters plight. They wanted to buff out some of the edge to make this palettable to a wider audience, but instead they just made it more offensive overall. They basically edited out 10 minutes worth of building up the beginning characters to make you feel super bad and awful for them when they meet their grisly demise, but by removing those character moments it turns from a depressing tale into a middle schooler's edgelord fantasy where he's the Goblin Slayer, the most BADASS and AWESOME person in a world full of dumb stupid retards that don't deserve to live.
